  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1/4 cup chicken broth
  • 1 can 10 fluid ounces Ro-tel diced tomatoes & green chilies, with juices
  • 1 tablespoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 8 ounces cream cheese e.g., Philly, softened
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Soften the cream cheese by leaving it out of the fridge for at least an hour before starting, or microwave it for 30 seconds. Cut into cubes for easier melting.
  • Season both sides of the chicken halves with salt and pepper.
  • In a skillet over medium-high heat, combine oil and butter. Once hot, sear the chicken until browned and cooked through, about 5-6 minutes per side. Transfer to a plate.
  • Lower the heat to medium, add garlic, and sauté for 30 seconds.
