  2. Brown the butter: In a large heavy-bottomed pot or Dutch oven, melt the unsalted butter over medium heat. Continue cooking, swirling the pan frequently, until the butter foams up and turns a deep golden brown with a nutty aroma (about 3 to 5 minutes). Immediately reduce the heat to low.
  3. Melt the marshmallows: Add the mini marshmallows to the pot. Stir continuously until just melted and smooth, then immediately pull the pot off the heat. Overcooking the marshmallows at this stage will result in rock-hard treats.
  4. Color and flavor: Stir in the pumpkin pie spice, kosher salt, and orange gel food coloring until the mixture reaches a vibrant, even orange shade.
