Caramel Cream Cheese Filling

  • 1 (8-oz.) block full-fat cream cheese, softened

Instructions

  1. Reduce the cider: Pour the apple cider into a medium saucepan over medium-high heat. Bring to a boil and cook until the liquid has thickened slightly, darkened, and reduced to exactly 1/3 cup, about 15 to 20 minutes. Pour into a heatproof measuring cup and let cool for at least 15 minutes.
  2. Prep your pans: Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper. In a small bowl, mix the turbinado sugar and ground cinnamon for the topping.
  3. Whisk the dry ingredients: In a medium bowl, whisk together the flour, apple pie spice, baking powder, kosher salt, and baking soda.
  4. Mix the wet ingredients: In a large mixing bowl, aggressively whisk the light brown sugar, oil, apple butter, eggs, and vanilla extract until completely smooth and emulsified. Slowly drizzle in the cooled, reduced apple cider while whisking constantly.
