Garlic-Butter Spider Taco Ring

Recipe by Mollie

Brushed with melted garlic-cilantro butter before baking, this spooky Halloween centerpiece upgrades the classic crescent taco ring with glossy, golden pull-apart spider legs that taste like savory garlic breadsticks. Inside the flaky ring sits a bold, non-soggy filling of spiced ground beef, black beans, and sharp cheddar surrounding a cool pile of fresh taco toppings.

  • Total Time65 minutes
  • Yield1 spider taco ring (serves 8) 1x

Ingredients

Scale

Beef and Black Bean Taco Filling

  • 1 tablespoon (15 ml) canola or vegetable oil
  • 1 lb (450 g) 85% lean ground beef
  • 1½ cups (225 g) finely diced yellow onion (from 1 large onion)
  • 1½ teaspoons (4.2 g) Diamond Crystal kosher salt, divided (or ¾ teaspoon / 4.2 g table salt, divided into ¼ teaspoon and ½ teaspoon)
  • 2 tablespoons (16 g) chili powder
  • 4 large garlic cloves, minced (about 4 teaspoons / 12 g)
  • 2 teaspoons (6 g) ground cumin
  • 1½ teaspoons (1.5 g) dried oregano
  • 1 (15-oz / 425 g) can black beans, rinsed and drained
  • ⅓ cup (80 ml) water
  • 2 cups (225 g) shredded sharp cheddar cheese

Crescent Spider and Garlic-Butter Glaze

  • 3 (8-oz / 226 g) cans refrigerated crescent roll dough (24 triangles total), chilled, divided
  • 2 tablespoons (28 g) salted butter, melted
  • 1 tablespoon (4 g) finely chopped fresh cilantro
  • ½ teaspoon (1.5 g) garlic powder

Spider Center Toppings

  • 2½ cups (125 g) finely shredded iceberg or romaine lettuce
  • 1 cup (170 g) seeded, diced Roma tomatoes (from 2 medium tomatoes)
  • ⅓ cup (80 g) full-fat sour cream, plus more for serving
  • 2 whole pitted black olives

Instructions

  1. Preheat the oven and prep the pans: Position oven racks in the upper and lower thirds of the oven and preheat to 400°F (200°C). Line 2 large rimmed baking sheets with parchment paper.
  2. Brown the beef and onion: Heat the oil in a large 12-inch (30 cm) skillet over medium-high heat until shimmering. Add the ground beef, onion, and ½ teaspoon of the kosher salt (or ¼ teaspoon table salt). Cook, breaking the meat into small crumbles with a wooden spoon, until the onion is translucent, no pink remains in the beef, and the meat reaches an internal temperature of 160°F (71°C), 6 to 8 minutes. Tilt the pan and spoon off any pooled grease if needed.
  3. Bloom the spices and simmer the beans: Stir in the chili powder, garlic, cumin, oregano, and the remaining 1 teaspoon kosher salt (or ½ teaspoon table salt); cook, stirring constantly, until darkened and fragrant, 1 minute. Stir in the black beans and ⅓ cup (80 ml) water. Bring to a lively simmer, then reduce the heat to medium-low and cook, stirring occasionally, until the liquid thickens into a glossy coating with no watery puddles left in the pan, 3 to 4 minutes. Remove from the heat and cool for 5 minutes, then stir in the cheddar cheese until melted through.
  4. Shape and stuff the spider body: Place a 5-inch (13 cm) round bowl upside down in the center of the first parchment-lined baking sheet as a guide. Open 2 cans of the chilled crescent roll dough and separate into 16 triangles. Arrange the triangles in a sunburst circle around the bowl with the pointed tips facing outward and the short flat bases overlapping by about 1 inch (2.5 cm), then remove the bowl. Spoon the warm beef mixture in an even ring over the overlapping dough bases. Pull each triangle point up over the filling and tuck the tip snugly underneath the inner ring of dough to enclose the filling (a little filling peeking between the strips is normal).
  5. Roll the spider legs: Remove the remaining 1 can of crescent roll dough from the refrigerator and separate into 8 triangles. Working with one triangle at a time, fold the narrowest pointed tip inward by 1½ inches (4 cm), then roll the dough tightly from the longest straight edge into an 8-inch (20 cm) rope. Transfer the ropes to the second baking sheet, spacing them apart, and bend each one in the center to form a crisp “V” knee joint.
  6. Brush with garlic butter and bake: Stir together the melted butter, chopped cilantro, and garlic powder in a small bowl, then brush the mixture evenly over the crescent ring and all 8 spider legs. Place the spider body on the lower rack and the legs on the upper rack. Bake the legs for 9 to 11 minutes until puffed and golden brown. Continue baking the spider body for a total of 16 to 18 minutes until the pastry is deep golden brown and crisp underneath and the center of the beef filling registers at least 165°F (74°C). Cool on the baking sheets for 5 minutes.
  7. Assemble the spider and serve: Use two wide spatulas to slide the crescent ring onto a large serving platter. Tuck 4 baked crescent legs upright into the crevices on each side of the body so the bent knees point upward. Fill the open center of the ring with striped rows of shredded lettuce, diced tomatoes, and sour cream, then press the 2 black olives into the sour cream for the spider’s eyes. Serve warm with extra sour cream on the side.

Notes

  • Why it works: Trimming the skillet water to ⅓ cup (80 ml) and binding the cooled beef with a full 2 cups (225 g) of sharp cheddar keeps the filling cohesive so it stays inside the ring instead of soaking the bottom crust, while brushing the dough with garlic-cilantro butter gives the pale crescent legs golden color and savory breadstick flavor.
  • Keep the leg dough cold: Leave the third can of crescent rolls in the fridge until you are ready to roll the legs; cold dough holds a tight rope shape and keeps a sharp “V” bend without stretching or flattening in the oven.
  • Make-ahead prep: You can cook the beef and black bean filling up to 2 days in advance and store it in an airtight container in the refrigerator. Let it sit at room temperature for 20 minutes and fold in the shredded cheddar just before assembling the crescent ring.
