Ingredients
  

  • 12 ounces (340g) full-fat cream cheese, softened to room temperature
  • ¾ cup (177ml) heavy whipping cream, cold
  • 3 tablespoons powdered monk fruit sweetener blend or equivalent powdered sugar substitute, to taste
  • 1 teaspoon fresh lemon zest
  • 12 ounces (340g) fresh strawberries, hulled and quartered or sliced
  • 10 ounces (283g) fresh blueberries
  • 9 ounces (255g) fresh blackberries
  • 4 ounces (113g) fresh raspberries

Instructions
 

  • Prep the berries: Rinse the berries and dry them very well. Hull and slice/quarter the strawberries.
  • Mix the base: Beat the softened cream cheese until completely smooth. Add the sweetener and lemon zest; beat until combined.
  • Whip the cream: In a chilled bowl, whip the cold heavy cream to soft peaks.
  • Combine: Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  • Fold in berries: Gently fold in the strawberries, blueberries, blackberries, and raspberries until evenly distributed (avoid crushing).
  • Serve or chill: Serve immediately, or cover and refrigerate for 15 to 30 minutes for best flavor and texture.

Notes

Yield: Approx. 8.5 cups
Storage: Store leftovers in an airtight container in the refrigerator for up to 2 to 3 days. Keep chilled and do not leave at room temperature for more than 2 hours.
