Keto Bread Rolls Recipe

Ingredients
  

  • 2 cups of shredded cheese mozzarella or cheddar recommended; see notes
  • 1/4 cup of cream cheese softened
  • 1 1/2 cups of almond flour
  • 3 large eggs divided (see notes)
  • 1 teaspoon of baking powder optional

Instructions
 

  • Preheat your oven to 180°C (350°F) and line a large baking tray with parchment paper.
  • In a large microwave-safe bowl, combine the shredded cheese and cream cheese. Microwave for 30 seconds or until the cheeses have mostly melted. Remove from the microwave and whisk until smooth. Allow the cheese mixture to cool for a few minutes.
  • Once slightly cooled, incorporate the almond flour and two of the eggs into the cheese mixture, mixing until a smooth dough forms.
  • With your hands, form the dough into 10 balls and place them onto the prepared tray. Beat the remaining egg and, using a pastry brush, gently brush the tops of each roll.
  • Bake in the preheated oven for 25 minutes, or until they turn golden brown. Serve the rolls warm for the best experience.

Notes

Notes:
  • For the cheese, low moisture mozzarella is preferred for its minimal flavor impact.
  • Regarding the eggs, two are for the dough, and one is for the egg wash on top.
Storage Tips:
  • To Store: Keep leftover rolls in the refrigerator, covered, for up to 1 week.
  • To Freeze: Cool the rolls, place them in a ziplock bag, and freeze for up to 6 months. Thaw completely before reheating.
  • To Reheat: Warm the rolls in the microwave for 30 seconds or in a preheated oven until they are heated through. This is important as the rolls can be too dense when at room temperature or cooled.
