One-Pot Instant Pot Buffalo Chicken Dip

This streamlined method keeps every step right inside the Instant Pot—no transferring chicken to a separate bowl for shredding, and no scorched cheese on the bottom of the insert. It yields a rich, meaty dip with an impressive cheese pull and a finishing swirl of extra buffalo sauce for the perfect punch.

Chicken & Cooking Liquid

  • 1 ½ pounds (680 g) boneless, skinless chicken breasts
  • ¾ cup (180 ml) buffalo sauce, plus 2 tablespoons for drizzling (divided)
  • ½ cup (120 ml) low-sodium chicken broth (for a standard 6-quart pot)
  • 2 tablespoons (28 g) unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Cheeses & Garnish

  • 1 block (8 ounces / 225 g) cream cheese, cut into cubes and softened
  • 1 ½ cups (170 g) shredded sharp cheddar cheese
  • ½ cup (55 g) shredded mozzarella cheese
  • ⅓ cup (35 g) crumbled blue cheese
  • 3 scallions (green onions), thinly sliced


Instructions

  1. Load the pot: Place the chicken breasts in the bottom of the Instant Pot. Pour in the ½ cup of chicken broth and ¾ cup of buffalo sauce. Add the butter, garlic powder, and onion powder. Toss briefly so the chicken is mostly coated in the liquid.
  2. Pressure cook: Secure the lid and set the valve to the Sealing position. Select Pressure Cook (or Manual) on High pressure for 10 minutes. (It will take about 10 minutes to come up to pressure).
  3. Release pressure: When the cooking time is up, allow a Natural Release for 5 minutes, then carefully switch the valve to Venting to quickly release any remaining steam. Remove the lid.
  4. Verify and shred: Check that the chicken has reached a safe internal temperature of 165°F (74°C). If it hasn’t, press Sauté and simmer for a few more minutes until fully cooked, then press Cancel. To prevent a watery dip, ladle out and discard about ¼ cup of the cooking liquid. Using two forks (or a handheld electric mixer on low speed), shred the chicken directly in the pot until it reaches your desired consistency.
  5. Melt the cheeses: Press Cancel to clear any active programs, then select the Keep Warm function (do not use the Sauté function, which can scorch the bottom). Stir the cubed cream cheese into the hot shredded chicken mixture until mostly smooth. Fold in the sharp cheddar and mozzarella cheeses, stirring constantly until completely melted and creamy.
  6. Garnish and serve: Smooth the top of the dip with a spatula. Drizzle with the remaining 2 tablespoons of buffalo sauce, then scatter the crumbled blue cheese and sliced scallions over the top. Serve warm right from the pot.

Notes

  • Why it works: Adding ½ cup of chicken broth provides enough thin liquid to help prevent a “Burn” warning on standard 6-quart Instant Pot models. Shredding the chicken directly in that hot liquid allows the meat to absorb maximum flavor before the dairy is added.
  • Preventing scorched bottoms: Relying on the residual heat and the “Keep Warm” setting to melt the cheeses is safer than using the Sauté function, which is notoriously aggressive and can cause thick dairy mixtures to stick and burn in seconds.
