One-Pot Instant Pot Buffalo Chicken Dip
Skip transferring hot meat to a separate bowl. The Instant Pot buffalo chicken dip shreds right in the spicy broth for a thick, bubbling orange cheese pull. I finally cracked the code on melting dairy directly in the insert without scorching the bottom.

Why This One-Pot Method Actually Works
I love the idea of a true single-vessel appetizer, but thick dairy and pressure cookers are notorious enemies. The secret here is using just enough low-sodium chicken broth to bring the pot to pressure and avoid the dreaded burn notice. By ladling out a quarter cup of that cooking liquid before you shred, you keep the texture reliably thick. Best of all, relying on the residual heat of the Keep Warm setting means we get smooth, melted cheese without a single burnt spot on the bottom of the pan.
Building the Dip from Chicken to Cheese
Load the liquids and chicken. Drop the boneless, skinless chicken breasts right into the pot with the broth, buffalo sauce, butter, garlic powder, and onion powder. Give it a quick toss so the meat is mostly submerged, which helps it cook evenly and soak up the heat.
Pressure cook and release. Seal the valve and set the pot to High pressure for 10 minutes. When the timer goes off, let it sit for a Natural Release for 5 minutes before you carefully vent the rest of the steam.
Adjust the liquid and shred. Watery dip is the enemy of a sturdy chip. I always ladle out and discard about a quarter cup of the hot cooking liquid right before I start pulling the meat apart. Then, take two forks and shred the tender meat directly inside the pot until it reaches the texture you want.

Melt the dairy gently. Hit Cancel to turn off any active heat, then press Keep Warm. Do not use Sauté, or the cheese will instantly stick and burn. Stir the softened cream cheese cubes into the hot meat until smooth, then fold in the sharp cheddar and mozzarella. Keep stirring constantly until the whole mixture turns thick, creamy, and uniform.

Garnish in the pot. Smooth out the surface, swirl on the reserved two tablespoons of buffalo sauce, and scatter the crumbled blue cheese and sliced scallions over the top.

Storing and Reheating Buffalo Chicken Dip
- Storage: Keep leftover dip in an airtight container in the fridge for up to 3 days.
- Reheating: Microwave individual portions in 30-second bursts, stirring in between so the oils do not separate. For larger amounts, warm it gently in a skillet over medium-low heat, adding a tiny splash of milk if it seems too thick.
- Make-ahead: You can cook and shred the chicken the day before, storing it in the fridge in its cooking liquid. When you are ready for the party, reheat it gently before stirring in the cheeses.
Instant Pot Buffalo Chicken Dip FAQs
Can I use chicken thighs instead of breasts?
Yes, boneless, skinless chicken thighs work beautifully and bring a bit more richness to the appetizer. Keep the cooking time the same.
Why did my dip turn out watery?
It usually happens if you skip ladling out that quarter cup of cooking liquid before shredding. If it is already mixed and too thin, stir in a handful of extra shredded cheddar and let it sit on Keep Warm uncovered for a few minutes to thicken up.
Can I freeze this appetizer?
Freezing is not recommended because the cream cheese and cheddar tend to separate and become grainy when thawed. It is best enjoyed fresh or from the fridge.
I love setting the whole warm pot right on a trivet in the center of the table with a huge pile of tortilla chips. Pin this one for your next game day. You are going to love having only one pan to wash when the night is over.

One-Pot Instant Pot Buffalo Chicken Dip
This streamlined method keeps every step right inside the Instant Pot—no transferring chicken to a separate bowl for shredding, and no scorched cheese on the bottom of the insert. It yields a rich, meaty dip with an impressive cheese pull and a finishing swirl of extra buffalo sauce for the perfect punch.
- Total Time40 minutes
- Yield12 servings 1x
Ingredients
Chicken & Cooking Liquid
- 1 ½ pounds (680 g) boneless, skinless chicken breasts
- ¾ cup (180 ml) buffalo sauce, plus 2 tablespoons for drizzling (divided)
- ½ cup (120 ml) low-sodium chicken broth (for a standard 6-quart pot)
- 2 tablespoons (28 g) unsalted butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Cheeses & Garnish
- 1 block (8 ounces / 225 g) cream cheese, cut into cubes and softened
- 1 ½ cups (170 g) shredded sharp cheddar cheese
- ½ cup (55 g) shredded mozzarella cheese
- ⅓ cup (35 g) crumbled blue cheese
- 3 scallions (green onions), thinly sliced
Instructions
- Load the pot: Place the chicken breasts in the bottom of the Instant Pot. Pour in the ½ cup of chicken broth and ¾ cup of buffalo sauce. Add the butter, garlic powder, and onion powder. Toss briefly so the chicken is mostly coated in the liquid.
- Pressure cook: Secure the lid and set the valve to the Sealing position. Select Pressure Cook (or Manual) on High pressure for 10 minutes. (It will take about 10 minutes to come up to pressure).
- Release pressure: When the cooking time is up, allow a Natural Release for 5 minutes, then carefully switch the valve to Venting to quickly release any remaining steam. Remove the lid.
- Verify and shred: Check that the chicken has reached a safe internal temperature of 165°F (74°C). If it hasn’t, press Sauté and simmer for a few more minutes until fully cooked, then press Cancel. To prevent a watery dip, ladle out and discard about ¼ cup of the cooking liquid. Using two forks (or a handheld electric mixer on low speed), shred the chicken directly in the pot until it reaches your desired consistency.
- Melt the cheeses: Press Cancel to clear any active programs, then select the Keep Warm function (do not use the Sauté function, which can scorch the bottom). Stir the cubed cream cheese into the hot shredded chicken mixture until mostly smooth. Fold in the sharp cheddar and mozzarella cheeses, stirring constantly until completely melted and creamy.
- Garnish and serve: Smooth the top of the dip with a spatula. Drizzle with the remaining 2 tablespoons of buffalo sauce, then scatter the crumbled blue cheese and sliced scallions over the top. Serve warm right from the pot.
Notes
- Why it works: Adding ½ cup of chicken broth provides enough thin liquid to help prevent a “Burn” warning on standard 6-quart Instant Pot models. Shredding the chicken directly in that hot liquid allows the meat to absorb maximum flavor before the dairy is added.
- Preventing scorched bottoms: Relying on the residual heat and the “Keep Warm” setting to melt the cheeses is safer than using the Sauté function, which is notoriously aggressive and can cause thick dairy mixtures to stick and burn in seconds.
