- 2 large egg yolks
- ¾ cup granulated sweetener of choice I recommend allulose
- ⅓ cup unsalted butter
- Juice of 2 large lemons
In a small saucepan, combine eggs, egg yolks, and sweetener. Whisk thoroughly until well mixed.
Set the saucepan over low heat. Stir in the butter and lemon juice, whisking continuously until the mixture thickens.
Once thickened, remove from heat. Strain the lemon curd through a sieve into a mixing bowl.
Allow the lemon curd to cool completely, then transfer to a jar or mason jar. Refrigerate for a minimum of two hours to chill.
