Ingredients
  

  • 2 large eggs
  • 2 large egg yolks
  • ¾ cup granulated sweetener of choice I recommend allulose
  • cup unsalted butter
  • Juice of 2 large lemons

Instructions
 

  • In a small saucepan, combine eggs, egg yolks, and sweetener. Whisk thoroughly until well mixed.
  • Set the saucepan over low heat. Stir in the butter and lemon juice, whisking continuously until the mixture thickens.
  • Once thickened, remove from heat. Strain the lemon curd through a sieve into a mixing bowl.
  • Allow the lemon curd to cool completely, then transfer to a jar or mason jar. Refrigerate for a minimum of two hours to chill.

  • Refrigeration: Keep the lemon curd in a covered container in the refrigerator. It remains fresh for up to 2 weeks.
