Yields: Approx. 24 bites Prep time: 35 minutes (includes heat-treating and cooling flour/mix) Set time: 30-45 minutes
Important Safety Note: Raw flour and cake mix can potentially contain harmful bacteria. This recipe includes steps to heat-treat these ingredients before use to reduce this risk, making them safer to consume in a no-bake treat. Do not skip this step.
Ingredients
- ¾ cup (approx. 90g) all-purpose flour
- 2 ¼ cups Funfetti cake mix (or similar confetti/rainbow bit cake mix)
- ¾ cup (12 tbsp / 170g) unsalted butter, softened to room temperature
- 6 tablespoons (75g) granulated sugar (cane sugar works too)
- ⅛ teaspoon fine sea salt (optional, balances sweetness)
- 2 ¼ teaspoons vanilla extract
- ¾ cup rainbow sprinkles (jimmies style recommended), plus more for topping
- 18 oz (approx. 510g) good quality white chocolate wafers, candy melts, or almond bark, chopped if needed
Instructions
- Heat-Treat Flour and Cake Mix (Essential Step):
- Preheat oven to 300°F (150°C). Spread the ¾ cup all-purpose flour evenly on one baking sheet and the 2 ¼ cups Funfetti cake mix evenly on another baking sheet.
- Bake for 5-7 minutes, or until an instant-read thermometer registers 165°F (74°C) when inserted into the flour/mix (be careful not to touch the hot pan). Alternatively, microwave each (flour and cake mix separately) in a microwave-safe bowl in 30-second bursts, stirring well between bursts, until the temperature reaches 165°F (74°C).
- Let the heat-treated flour and cake mix cool completely to room temperature before proceeding. Sift them if any clumps formed during heating.
- Prepare for Rolling: Line a large baking sheet or tray that will fit in your freezer with parchment paper or wax paper.
- Make the Confetti Dough: In a large bowl, combine the softened butter, cooled heat-treated flour, cooled heat-treated cake mix, granulated sugar, optional salt, and vanilla extract. Using a sturdy spoon or spatula, or a stand mixer with the paddle attachment, mix until fully combined and a smooth, cohesive dough forms. It might seem crumbly at first; using clean hands to knead it briefly in the bowl can help bring it together.
- Add Sprinkles: Gently mix ¾ cup of the rainbow sprinkles into the dough until evenly distributed.
- Roll the Bites: Using a 1-tablespoon cookie scoop or measuring spoon, scoop portions of the dough. Roll each portion between your palms into a smooth ball, about 1 inch in diameter. Place the rolled balls onto the prepared parchment-lined baking sheet. You should get approximately 24 bites.
- Briefly Freeze: Place the baking sheet with the rolled bites into the freezer for 10-15 minutes to firm them up slightly (this helps with dipping).
- Melt White Chocolate: While the bites are chilling, melt the white chocolate wafers or candy melts. Place them in a microwave-safe bowl (deep enough for dipping). Microwave on medium power (50%) in 30-second intervals, stirring well after each interval, until fully melted and smooth. Be careful not to overheat. (Alternatively, use a double boiler).
- Dip the Bites: Remove the firmed bites from the freezer. Working one at a time, drop a bite into the melted white chocolate. Use a fork or a dipping tool to gently roll it until fully coated. Lift the bite out, allowing excess chocolate to drip back into the bowl (tap the fork gently on the edge of the bowl).
- Decorate and Set: Carefully place the coated bite back onto the parchment-lined baking sheet. Immediately sprinkle additional rainbow sprinkles over the top before the white chocolate sets. Repeat with all the bites.
- Chill to Set: Place the baking sheet with the finished bites in the refrigerator for at least 20-30 minutes, or until the white chocolate coating is completely firm and hardened.
- Serve and Store: Serve the Rainbow Sprinkle Confetti Bites chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 7-10 days.
Recipe Notes:
- Heat-treating the flour and cake mix is a crucial safety step for no-bake recipes. Ensure they cool fully before mixing.
- Use softened, room temperature butter for easier mixing.
- White candy melts or almond bark generally provide the easiest and most reliable coating for dipping compared to standard white chocolate chips.
- Work relatively quickly when dipping, as the cold bites will cause the chocolate coating to set fast.
