  • 2 tablespoons all-purpose flour
  • 1 large egg
  • ½ cup panko breadcrumbs preferably whole-wheat
  • 1 tablespoon everything bagel seasoning see tip
  • 1 pound chicken tenders
  • ¼ cup grapeseed or canola oil
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white-wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • â…› teaspoon ground pepper
  • 5 ounces mixed baby greens

Instructions
 

  • Arrange three shallow dishes. In the first, place the flour. In the second, lightly beat the egg. In the third, mix together the panko breadcrumbs and everything bagel seasoning.
  • Dredge the chicken tenders first in flour, then dip in the egg, and finally coat with the breadcrumb mixture.
  • Heat grapeseed (or canola) oil in a large skillet over medium-high heat. Cook the chicken, turning once, until golden brown and an internal temperature of 165°F is reached, about 7 minutes. Adjust heat as needed to avoid burning.
  • In a large bowl, whisk together olive oil, vinegar, mustard, honey, and pepper. Toss the greens in the dressing.
  • Serve the salad topped with the chicken tenders.

  • Everything Bagel Seasoning: Find it in the spice aisle of well-stocked supermarkets or make your own. Mix 1 tablespoon each of dried minced garlic, dried minced onion, poppy seeds, sesame seeds, and salt with 1 ½ teaspoons ground pepper. Store in an airtight container for up to 3 months.
