  • 1/3 cup of Coconut Flour
  • 1 1/2 cups of Almond Flour
  • 1/4 cup of your preferred granulated sweetener erythritol or monk fruit sweetener, divided
  • 1 1/2 teaspoons of Baking Powder
  • 1/3 cup of Heavy Cream alternatives: half and half or milk of your choice
  • 3 tablespoons of Melted Coconut Oil
  • 2 Large Eggs divided and separated (see notes)
  • 1 teaspoon of Vanilla Extract
  • 3/4 cup of Blueberries fresh or frozen

For the Glaze:

  • 1/4 cup of Heavy Cream
  • 1/2 cup of Sugar-Free Powdered Sugar


  • Preheat your oven to 180¬įC (350¬įF) and prepare a large baking sheet with parchment paper.
  • In a large mixing bowl, combine coconut flour, almond flour, 3 tablespoons of sweetener, and baking powder.
  • In a separate bowl, whisk together heavy cream, coconut oil, one whole egg, one egg yolk, and vanilla extract until smooth.
