Silky Chocolate Hazelnut Fudge

Ingredients

  • 3 cups (approx. 18 oz / 510g) milk chocolate chips
  • ¾ cup (approx. 235g) Nutella (or other chocolate hazelnut spread)
  • 1 ½ cans (21 oz / 595g) sweetened condensed milk
  • ¼ teaspoon fine sea salt (optional, enhances flavor)
  • ½ cup chopped toasted hazelnuts (optional, for texture and flavor)

Instructions

  1. Prepare the Pan: Line an 8×8 inch square baking pan with parchment paper, leaving an overhang on two opposite sides to allow for easy removal later. Set aside.
  2. Melt Chocolate: Place the milk chocolate chips in a large microwave-safe bowl. Heat in the microwave on medium power (50%) in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. (Alternatively, melt the chocolate in a heatproof bowl set over a pan of simmering water, ensuring the bowl doesn’t touch the water).
  3. Combine Ingredients: Add the Nutella to the melted chocolate and stir until fully combined and smooth. Pour in the sweetened condensed milk and the optional salt. Stir vigorously until the mixture is very thick, smooth, and glossy. If using, stir in the optional chopped toasted hazelnuts now.
  4. Spread in Pan: Scrape the fudge mixture into the prepared parchment-lined pan. Spread it out into an even layer using the back of a spoon or an offset spatula. If desired, sprinkle the top evenly with the optional chopped hazelnuts (if not mixed in).
  5. Chill Until Firm: Place the pan in the refrigerator and chill for at least 2-4 hours, or until the fudge is completely firm and set.
  6. Cut and Serve: Once firm, use the parchment paper overhang to lift the entire block of fudge out of the pan onto a cutting board. Use a large, sharp knife to cut the fudge into 16 small squares (a 4×4 grid).
  7. Store: Store the fudge squares in an airtight container at room temperature for up to a week, or in the refrigerator for longer storage (allow to soften slightly before eating if refrigerated).

  • Using good quality chocolate chips will yield a better tasting fudge.
  • Ensure the condensed milk, Nutella, and melted chocolate are thoroughly combined for a smooth, even texture.
  • Toasting the hazelnuts beforehand enhances their flavor. To toast, spread chopped hazelnuts on a baking sheet and bake at 350°F (175°C) for 5-8 minutes until fragrant and lightly golden.
  • Fudge can be cut into smaller squares if desired for smaller servings.
