- 1.5 pints (3 cups / 710ml) Cookie Dough Ice Cream, slightly softened
- 9 tablespoons (approx. ½ cup + 1 tbsp / 135g) Chocolate Hazelnut Spread (like Nutella)
- For the Chocolate Shell:
- 18 ounces (approx. 3 cups / 510g) Semisweet Chocolate Chips
- ½ cup (118 ml / ~95g) Coconut Oil (refined or unrefined)
- ¾ cup (approx. 110g) Toffee Bits
- Flaky Sea Salt, for sprinkling (optional)

- Prepare the Brownie Base: Once your 9×13 pan of brownies is completely cool, carefully remove the whole slab onto a large cutting board. Trim away any dry or overly crisp edges. Cut the brownies into 9 equal squares (a 3×3 grid).
- Shape the Brownie Liners: Prepare a standard 12-cup muffin tin by lining 9 of the cups with large individual squares of plastic wrap, leaving generous overhang on all sides. Take one brownie square and place it between two sheets of parchment paper or plastic wrap. Gently use a rolling pin to flatten it into a thinner round or square, approximately ¼ inch thick and large enough to line a muffin cup with some overhang. Carefully lift the flattened brownie and press it into one of the plastic-wrap-lined muffin cups. Repeat with the remaining 8 brownie squares.
- Assemble the Bites: Allow the ice cream to sit at room temperature for 5-10 minutes to soften just enough for easy scooping. Working efficiently to minimize melting, scoop a generous portion of cookie dough ice cream into each brownie-lined cup (you’ll use about 1/3 cup of ice cream per bite). Use the back of a small spoon to create a slight indentation in the center of the ice cream scoop. Spoon approximately 1 tablespoon of chocolate hazelnut spread into each indentation.
- Wrap and Freeze: Gather the overhanging edges of the plastic wrap and use them to help fold the overhanging edges of the flattened brownie up and over the ice cream and hazelnut spread, enclosing the filling completely. Press gently to seal the brownie edges together. Repeat for all 9 bites. Place the entire muffin tin in the freezer for at least 4-6 hours, or preferably overnight, until the bites are frozen completely solid.
- Prepare the Chocolate Shell: Line a large baking sheet or tray with wax paper or parchment paper – ensure it will fit in your freezer. In a medium-sized, microwave-safe bowl (deep enough for dipping), combine the semisweet chocolate chips and coconut oil. Microwave on medium power (50%) in 20-second intervals, stirring well after each interval, until the chocolate is completely melted and the mixture is smooth. Stir the toffee bits into the melted chocolate mixture.
- Coat the Bites: Remove the solidly frozen brownie bites from the freezer and unwrap them from the plastic wrap. Working one at a time, use two forks or a dipping tool to carefully dip each frozen bite into the warm chocolate-toffee mixture, turning to coat it completely. Lift the coated bite, allowing excess chocolate to drip off briefly, and place it on the prepared wax-paper-lined baking sheet. If desired, sprinkle immediately with a little flaky sea salt. Repeat quickly with the remaining bites.
- Final Freeze: Place the baking sheet with the coated bites back into the freezer for about 15-30 minutes, or until the chocolate shell is completely firm.
- Serve: Serve the Frozen Brownie Cookie Dough Bites chilled, garnished with whipped cream and a drizzle of caramel sauce, if desired.
Storage Notes:
- Store the finished bites in an airtight container in the freezer. They will keep well for several weeks, up to 3 months, although texture is best within the first month.
- Allow bites to sit at room temperature for a few minutes before serving if they are frozen extremely hard.
