A Low-Carb Love Story:
Before keto, my heart belonged to fluffy white dinner rolls. When I started keto, recreating this comfort food became my mission. After countless experiments, these rolls emerged as the absolute winner, surpassing even store-bought options. My dinner party guests were floored! They couldn’t believe these were low-carb – proof that keto doesn’t have to mean sacrifice.
Effortless Keto Magic:
The magic lies in the simplicity. You only need:
- Almond flour: Fine or superfine is best for fluffiness.
- Shredded cheese: Low-moisture mozzarella is ideal, but cheddar works too.
- Cream cheese: Full-fat and softened for a smooth texture.
- Eggs: One for the dough and one for the golden, delicious egg wash.
Step-by-Step to Keto Roll Bliss:
1. Prep for Baking: Heat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. Melt & Mix: In a microwave-safe bowl, heat the cheese for 30 seconds until mostly melted. Whisk until smooth, then let it cool slightly.
3. Combine & Knead: Stir in the almond flour and two eggs until a smooth dough forms. Use your hands to shape it into 10 even balls.
4. Brush & Bake: Whisk the remaining egg and brush it onto each roll. Bake for 25 minutes, or until golden brown.
5. Savor the Warm Reward: Enjoy these heavenly rolls immediately while they’re warm and soft. Remember, they firm up when cool, so reheating is key.
Tips for Extra Keto Goodness:
- Serve warm: These rolls are at their best right out of the oven. Reheat if they cool down.
- Mini sliders: Use these rolls instead of buns for delicious low-carb mini burgers.
- Garlic lovers: Brush the unbaked rolls with melted butter mixed with minced garlic for an irresistible twist.
- Storing & Freezing: Leftovers can be stored in the fridge for up to a week or frozen for up to 6 months. Thaw before reheating.

Keto Bread Rolls Recipe
Ingredients
- 2 cups of shredded cheese mozzarella or cheddar recommended; see notes
- 1/4 cup of cream cheese softened
- 1 1/2 cups of almond flour
- 3 large eggs divided (see notes)
- 1 teaspoon of baking powder optional
Instructions
- Preheat your oven to 180°C (350°F) and line a large baking tray with parchment paper.
- In a large microwave-safe bowl, combine the shredded cheese and cream cheese. Microwave for 30 seconds or until the cheeses have mostly melted. Remove from the microwave and whisk until smooth. Allow the cheese mixture to cool for a few minutes.
- Once slightly cooled, incorporate the almond flour and two of the eggs into the cheese mixture, mixing until a smooth dough forms.
- With your hands, form the dough into 10 balls and place them onto the prepared tray. Beat the remaining egg and, using a pastry brush, gently brush the tops of each roll.
- Bake in the preheated oven for 25 minutes, or until they turn golden brown. Serve the rolls warm for the best experience.
Notes
- For the cheese, low moisture mozzarella is preferred for its minimal flavor impact.
- Regarding the eggs, two are for the dough, and one is for the egg wash on top.
- To Store: Keep leftover rolls in the refrigerator, covered, for up to 1 week.
- To Freeze: Cool the rolls, place them in a ziplock bag, and freeze for up to 6 months. Thaw completely before reheating.
- To Reheat: Warm the rolls in the microwave for 30 seconds or in a preheated oven until they are heated through. This is important as the rolls can be too dense when at room temperature or cooled.
